RICE FLOUR CREPES
Makes 10 8-inch crepes
1 cup White Rice Flour Superfine
1/4 cup granulated sugar
1/2 teaspoon salt
1/8 teaspoon xanthan gum
3 large eggs
1 cup warmed milk
2 tablespoons unsalted butter, melted
1 teaspoon Authentic Foods Vanilla Powder (Optional)
In a medium bowl, combine flour, sugar, salt, and xanthan gum. In another bowl using an electric mixer beat the eggs on medium speed until pale and foamy. On low speed, beat in warmed milk and melted butter. Mix for two minutes on medium speed until smooth. Slowly add the dry ingredients to the liquid mixture. Mix on low speed until it becomes the consistency of a thin pancake batter. Allow the batter to sit for 5 minutes before cooking. Heat the griddle to 375 degrees F. Ladle the batter in the center of the griddle and spread evenly into a thin circle. Cook for 1-2 minutes until slightly golden brown. Turn over to cook the other side for 1 minute (or more for a crispier crepe). Stack on plate and keep warm. Repeat until all the batter is used. Then fill with your favorite ingredients such as grilled chicken or shrimp for savory crepes, or a combination of fresh fruits, fruit fillings, and puddings for sweet crepes. Roll it up and enjoy while it is warm!
